Belize was the 3rd stop on our April, 2005 cruise on Royal Caribbean.  We stopped at the port of Belize City where we got to do an "extreme cave tubing" excursion.  We took a 30 minute bus ride and then walked 45 minutes back into what I would call "the jungle", carrying our tubes the whole way.  It was an amazing float down this river through various caves.  As we were exiting the river up a muddy bank, Trina fell and twisted her ankle, thus decommissioning herself from off shore activities the rest of the cruise.

Probably the best "box lunch" meal we ever had was on our way out to the excursion site at some little shack with 10 or so picnic tables on the side of the road.
